Last summer, Johnny C.Y. Lam spent three weeks traveling coast to coast, capturing the vibrant, distinctive, and exquisitely crafted dishes of all 31 finalists for the 2025 edition of Air Canada's Best New Restaurants. After more than 170 dishes and over 30 cocktails, food writer Tara O'Brady selected Halifax's Mystic, Montreal's Le Violon, Toronto's Linny's, and Vancouver's Sushi Hyun Omakase to headline a meticulously curated Top 10, showcasing Canada's most exceptional new dining destinations.
